Last night was dessert for dinner again... I see this as becoming a regular Thursday night deal. By this point in the week I'm tired, it's not quite Friday, and we're all in need of a boost.
Dessert was suppose to be a chocolate pudding of some sort, but we headed to base for the afternoon. Pudding just wouldn't hold up in the car until we arrived at our picnic place. It was hot out!
It ends up that we had a lightening storm so the plans for a walk, swimming, and a picnic were dashed BUT we still had Strawberry Cream pie as our dessert for dinner to look forward to.
All continued to be right in my children's world.
Back at home Daddy made a camp fire, lit the tiki torches, and I served up the pie.
And it was good.
We even had entertainment!
The neighborhood boys were playing baseball and we had front row seats!
Next week, perhaps I will make the pudding. Or something without strawberries... Maybe.

Strawberry Cream Pie
6oz. cream cheese
1 cup heavy whipping cream
1 teaspoon vanilla
1/2 cup sugar ( I used powdered)
1 1/2 pints of strawberries
1 Tablespoon cornstarch
1 pie crust*
( *I typically make a graham cracker)
Whip the heavy cream, vanilla, and sugar together until peaks form.
Place in a separate bowl. Beat cream cheese in mixing bowl until smooth. Add in whipping cream mixture and combine until creamy. Spread into pie crust and refrigerate.
Crush half of the berries in a small saucepan. Bring to a simmer. Add in cornstarch (** Mix cornstarch with a small amount of fruit juice before adding to the crushed strawberries)
Cook until a medium thickness is reached. Cool.
Place the remainder of the strawberries top side down on the top of the pie. Cover with the cooled glaze. Refrigerate until set. 1-4 hours.

I wish I lived close to you...I'd stop by and enjoy the summer evenings with you! I can't wait to make this pie. I make a fresh strawberry pie (basically the same as yours, but without the cream cheese and whipped cream) , which I love...but can't wait to try something new!
OH how I really need to make one of those soon. I really need to taste the yummyness again.

That pie looks amazing and strawberries are healthy so it's actually a well-balanced meal...:-)

Yum! I got this recipe from your mom a long time ago and make it often - although not as often as my husband wishes! So Good!
I tend to eat dessert for breakfast--a la cake, brownies whatever. But Dessert Thursdays; I can totally climb on board with that!
