These muffins are incredible. Really. I'm not just saying that. Moist, delicious, and healthy! Shhhh ......They even contain a vegetable. Perfect, don't you think? Here is the recipe:
Morning Glory Muffins
1 cup sugar
2 1/4 cups flour ( I do 1c. white and 1 1/4c. whole wheat)
1 Tablespoon cinnamon
1/2 teaspoon salt
2 teaspoons baking powder
1/4 cup molasses
1 cup grated carrots
1 apple grated
8 oz. crushed pineapple - drained
3 eggs
1 cup oil
1 teaspoon vanilla
1/2 cup pecans broken into small pieces -optional
Directions:
Sift together the first six ingredients in a medium bowl.
In a separate bowl whip eggs, oil, and vanilla.
Pour wet ingredients into the dry ingredients. Add the carrots, apple, pineapple and nuts. Mix well.
Pour into greased or papered muffin tins. Bake at 350 degrees for 25 minutes. The muffins might need a few minutes longer to bake should you use a muffin tin with an over-sized cup.

Excellent choice, Andrea!!! These sound and look incredible, I'll have to be sure to get these ingredients next month when I go grocery shopping. Don't let me forget, please. I'm also planning on trying your chicken nuggets. I need to go back through your Tuesday recipes and save them so I can try them out.

Wow, I completely forgot about these muffins, I don't know how because they are sooooo good, I could eat like 30 of them in one sitting! Especially when they are hot out of the oven! Man I'm gonna have to make em now! haha!
These look so good. I just read your last two posts and how precious. I wanted some alone time yesterday but my older son needed some help with his homework, so I was off to help him and when he was done he put his stuff away and said "mom your a good mom, I just wanted you to know that" then he hugged me. My 11 year old hugged me on his own will. It was better than having my alone time.

We made your muffins today - yumm! The apple and carrot and pineapple were so sweet, they were almost more like cupcakes. We will make them lots - thanks for sharing!
