I have a baking problem.... and it is a problem! Everything I bake - my waffles, pancakes, birthday cake - they all are dry and crumbly. I am sure it has to do with the altitude (4300 feet) because I've not run into this issue in all my baking years.
Just wondering if anyone had any tips for me regarding this! I appreciate your help - I'd even bake you cookies if we were neighbors!

I found another website that might have more information for you. There is some good ideas at the bottom of the page for adjusting recipes for higher altitudes. We lived in Albuquerque, but I don't remember the baking dilema. Of course it was 1990 to 1994. :)

I usually put a couple of tablespoons of melted butter in my pancake/waffle batter to keep them from being dry. For white cakes, instead of adding oil, egg, and water to the mix, I use a can of Fresca. Cakes are insanely moist this way. :-)
I'm not sure, but a little more liquid, a little less baking powder at higher altitudes...

Hi Andrea! I'm sorry but I have no useful advice on baking at a high altitude, but I was wondering if you would write a post on how you got into healthy eating and cooking everything from scratch. I think that what you do is amazing and your kids are very fortunate!! Thanks!! Christy
How silly of me! I could researched it online. I was thinking along the lines of "call Mom" except my mom has never lived at high elevation - so I "called" you! :)

Sorry I know nothing, nothing at all about altitude - other than it dries out my skin and chaps my lips. I know, I stink.
looks like you got some good advice here and I really have nothing to add, except to say that when we lived in Denver I had the same problem and never came up with much of a solution. Let us know what ends up working- I'll remember it in case we ever end up living in high altitude again :)
